Eggplant In Garlic Sauce

 

1 medium eggplant

1 tsp. Butcher Block Garlic Lovers

½ tsp ginger

1 Tbsp. hoisin sauce

2 green onions finely chopped

1 tsp. soy sauce

 

Cut the eggplant lengthwise into 1” strips

Boil 1” of water in a large frying pan and then add the eggplant strips stirring occasionally, until eggplant is softened and very little water remains (about 7 minutes and you may need to add extra water during this process)

Remove eggplant and put into a bowl

Boil ½” water again in the frying pan.

Add Butcher Block Garlic Lovers, ginger, hoisin sauce, and simmer 10 minutes, stirring and adding more water occasionally.

Add soy sauce and onions

Add the eggplant strips again and cook over low heat for 5 minutes, stirring to coat.

This can be served hot or at room temperature.
