Baked Trout With Mango & Mushrooms

1 de-boned trout

1 large Mango peeled & slices (optional)

2 cups fresh button mushrooms quartered

½ cup carrots peeled and sliced into thin strips

3 Tbsp. fresh parsley

½ cup chopped spring onions

½ cup white wine

1 tsp. Old Florida Mango Magic

olive oil

 

  1. Lay a large sheet of aluminum foil flat.

  2. Drizzle with olive oil.

  3. Open the de-boned trout and place on foil.

  4. In the center of the trout, place the mangoes, mushrooms, carrots, and onions.

  5. Sprinkle with parsley & wine.

  6. Season with Old Florida Mango Magic

  7. Close trout & fold over the foil, tucking in the sides to resemble a well sealed bag.

  8. Bake trout in preheated oven or grill at 400° F for 8-10 minutes.

  9. Bag should puff up when done.
